Acetic acid, also known as ethanoic acid, is an organic chemical compound best recognized for giving vinegar its sour taste and pungent smell. It is one of the simplest carboxylic acids (the second-simplest, after formic acid) and has the chemical formula CH3COOH.  It is a colorless liquid that when undiluted is also called glacial acetic acid.

A majority of the acetic acid that is produced is used to produce vinyl acetate monomer, or VAM.  Vinyl acetate monomer (VAM) is a building block that is used in many industries to make paints, adhesives, packaging, and more. Acetic acid is a chemical reagent for the production of chemical compounds. The largest single use of acetic acid is in the production of vinyl acetate monomer, closely followed by acetic anhydride and ester production. The volume of acetic acid used in vinegar is comparatively small.

Acetic acid is the sour-tasting compound that gives that characteristic tang to vinegar, pickles, and sourdough bread. The chemical bonds in starches and sugars may be disrupted by acetic acid. Other theories are that acetic acid causes slower digestion or faster rates of transfer of sugar from your bloodstream to your muscles.
