Soy Lecithin is the brownish yellow complex mixture of glycolipids, phospholipids, neutral lipids and sugars. The use of Soy to produce the lecithin is the highest as compare to the other sources of lecithin. What is Soy Lecithin?
Lecithin is term used to denote a variety of naturally occurring fatty compounds found in animal and plant tissues composed of choline, fatty acids, glycerol, glycolipids, phospholipids, phosphoric acid and triglycerides lecithin was originally isolated from egg yolk. It is regularly extracted from cottonseed, marine sources, milk, rapeseed, soybeans, and sunflower. It is usually used as a liquid but also can be purchased as granules. Soy lecithin (also marked as E322) is extracted from soybeans either mechanically or chemically using hexane. Soy lecithin consists of three types of phospholipids; phosphatidylcholine (PC), phosphatidylethanolamine (PE) and phosphotidylinositol (PI).

It's actually a byproduct of the soybean oil production. By and large, the vast majority of lecithin use centers around its unique ability of being an excellent emulsifier. 

Natural soy derived emulsifier in food processing are increasingly being sold as soybeans are one of the cheapest crops in the US (thanks in part to federal subsidies to growers to us), Most people with soy allergies can also use products containing soy lecithin, because it is derived from the soybean oil, whereas the allergy itself relates to the soy protein.

Soy lecithin is popular because of its emulsifier properties mainly; it improves solidity in margarine and gives consistent texture to dressings and other creamy products. 

It acts as a multifunctional, flexible and versatile tool, to counteract spattering during frying; lecithin is used in chocolates and coatings.
