Sucrose esters are obtained by esterifying sucrose with palm oil from edible fatty acids. This allows them to be used as emulsifiers in almost all food formulations. Sucrose is made to react with fatty acid esters to produce sucrose esters. Lauric acid, myristic acid, palmitic acid, stearic acid, and behenic acid are some of the saturated fatty acids used to make sucrose esters. Sucrose esters are generally manufactured by using interesterification in which the fatty acids used for the synthesis of sucrose esters are themselves in the esterified form. Another method used for the production of sucrose esters is emulsion process which is based on micro-emulsion technology. Sucrose dissolved in propylene glycol alongside a basic catalyst, for instance potassium methoxide. Propylene glycol is extracted by vacuum distillation at temperatures exceeding 120 degrees Celsius followed by filtration to obtain the purified product. Throughout the distillation of propylene glycol, the system remains transparent, indicating the formation of a micro dispersion of sucrose. The yield of the reaction is 96%. Sugar Esters are available with a wide range of Hydrophilic Lipophilic Balance (HLB) values which are determined by the degree of esterification and the kind of fatty acid used. Sucrose esters with a low HLB function as a water-in-oil emulsifier, while sucrose esters with a high HLB act as an oil-in-water emulsifier.
